The Rachel (Wendy's Version)

Ingredients

Coleslaw

Sliced turkey

Sliced baby Swiss cheese

Mayo

2 slices good bread

Butter

Directions

Slather bread slices with mayo. Add turkey and cheese and top with a generous amount of coleslaw to one slice. Top with the other slice of bread. Spread butter on the outside of both sides of the bread and grill in a panini maker or on the stove top until bread is toasty and cheese has melted.

Make it vegan:

 

Use a yummy vegan cheese, Duke’s vegan mayo for coleslaw and bread, plant-based butter, and skip the turkey.

 

Basic Coleslaw Recipe:

 

High quality pre-chopped slaw mix

Juice of 1/2 lemon

1 cup mayo

Salt and pepper to taste

 

Make it yours and add:

 

Rice or cider vinegar and/or instead of lemon

Thinly sliced red and yellow peppers

Green apple cut into matchsticks

Pickle relish

Dijon mustard

Jalapeño pepper

Red onion

Pickled shallots

Curry, cilantro, parsley, celery seeds

Sugar if you like a sweeter coleslaw
