1 Cup Chopped Onion
1/4 Cup Butter (1/2 stick)
4 Cups Freshly Cooked White or Brown Rice (about 1 1/3 cups raw)
2 Cups Grated Cheddar Cheese
1 Pint Sour Cream
1 Cup cream-style Cottage Cheese
1/2 t salt
1/4 t Pepper
1 Large Bay Leaf Crumbled
2 4 oz Cans Chopped Green Chiles (NOT HOT)
Chopped Parsley for Garnish
Preheat oven to 375º
Grease a 12 x 8 inch baking dish.
Cook onion in butter until just tender. Stir into rice. Mix rice with cheese, sour cream, cottage cheese, salt, pepper, and bay leaf. Layer rice mixture in prepared dish with chilis, ending with rice.
Cover and bake for 35 - 40 minutes until bubbly all over.
