Chickpea Salad Sandwich

Ingredients

Rinse and drain 2 cans chickpeas

Put in a bowl and add:

2 stalks finely chopped celery

Creamy dill sauce (see recipe under sauces)

Pickled shallots (optional)

Directions

Stir first 3 ingredients together, add shallots and let sit at room temperature, stirring occasionally,  until ready to add to your dish. Drain the liquid and there you have it.

 

These are delicious in egg salad or any other cold salad. They are also great in green salads and stirred into steamed veggies.
